Can Actinic automatically use the image from the General tab, as the image for the extended info tab?

Yes. NETQUOTEVAR:PRODUCTIMAGE will work in an Extended Info Template. Indeed you can leave the INFOIMAGE stuff in the template and thus have 2 images if you like.
