Changing the customer's receipt email

How do you do that?

And when the customer submits their payment info and they get the page saying "Click here for your receipt"... can you change the content of that too?

You can change both of these things using the template manager. This tool is available under 'Advanced/Template Manager'. There are two ways to use it - one uses an image that you can click on and the other is a more traditional dialog.

In the second of those two you can change the emails on the miscellaneous tab and the checkout pages on the ordering tab.
