On the "Orders" tab double click on an order - click the "mail" tab then "new" and then "manage email templates" - select the template and then click on "edit"

No - what Jonty described will also allow you to edit a template flor future use. You can also edit email templates from the template editor:
Advanced|Template Manager| - Change view to the drab windows style if not already - Select the Miscellaneuos tab and you will see the email templates in the Email frame.
In fact you will also find them as txt files in your site1 folder.

Don't think you can modify emails that have already been sent!
That would be unethical at least. If you need to change something best to send a new email detailing the changes or modify the original as described by myself and Duncan above
