How to I change

When the customer works their way through the actinic order process, they reach a "Shipping Instructions" box to fill in - can i change this to "Date order required by"

If I can, how/where do I do it?

Although "Shipping Instructions" is not the text that I have in the database, if you mean the text "Enter any special delivery instructions" then that is Phase 2 ID 171 in Design | Text.
